Une autre mani\u00e8re de conjuguer les saveurs !<\/strong><\/p>\n<p>Ils s\u2019\u00e9taient retrouv\u00e9s au Guatemala, patrie du c\u00e9l\u00e8bre rhum Zacapa avec sept autres chefs \u00e9toil\u00e9s pour une exp\u00e9rience unique de <em>Slow Dining Experience<\/em>. On ne les pr\u00e9sente plus, ils sont jumeaux et viennent du sud de la France. A la direction de restaurants dans le monde entier, Jacques et Laurent Pourcel ont \u00e9t\u00e9 aussi, un temps, Chefs consultants aupr\u00e8s des cuisines des H\u00f4tels Tiffany et EastWest \u00e0 Gen\u00e8ve avec le talent qu\u2019on leur (re)conna\u00eet depuis l\u2019ouverture de leur Jardin des Sens \u00e0 Montpellier.<br \/>\nApr\u00e8s 27 ans d\u2019existence, les Chefs et leur \u00e9tablissement sortiront du Guide Michelin &#8211; une pr\u00e9sence de 25 ans, sans discontinuer &#8211; pour rebondir vers d\u2019autres cieux avec de nouveaux projets, des signatures in\u00e9dites, mais toujours \u00e0\u2026 Montpellier. Cr\u00e9ativit\u00e9, d\u00e9couvertes, cocktails-cr\u00e9ation, l\u2019audace est de mise, s\u2019applaudit et prend son temps ! Le repas des Fr\u00e8res Pourcel s\u2019est tenu ici en accord avec Zacapa, ce mythique rhum guat\u00e9malt\u00e8que qui vient de la Maison au-dessus des nuages\u2026 Fameux, magnifi\u00e9 pour \u00eatre vieilli dans des chais \u00e0 2300m d\u2019altitude, la cuv\u00e9e haut de gamme est, quant \u00e0 elle, vieillie en des futs de vin europ\u00e9en, de x\u00e9r\u00e8s espagnol ou encore de Cachant sa turbulence latine sous des mani\u00e8res de grande dame, une boisson tout en finesse \u00e0 (re)d\u00e9couvrir. La saveur est \u00e9tonnante, ronde en bouche, longue en parfum, l\u00e9g\u00e8rement fum\u00e9e, aux relents de miel d\u00fb au jus de canne concentr\u00e9 utilis\u00e9. De l\u2019ap\u00e9ritif au dessert, \u00e0 chaque s\u00e9quence du d\u00eener, Vincent Dumesnil a su pr\u00e9senter et d\u00e9cliner toutes les facettes et qualit\u00e9s du rhum et s\u00e9duire le palais.
